How do usually make a chicken soup with vegetables added?

    It depends how elaborate you ant to be. I brown some chicken pieces in oil, along with cut up onion and garlic. Then I add water or bouillon or the stock you can buy in grocery stores and simmer for a while. The other vegetables go in later so they don't get overcooked- peas, green beans, broccoli- whatever you want. You can also add some pasta. If you want it with rice, put that in with the stock because it will take about 20 minutes. Or cook it separately.

  • This is my recipe. There are no measurements other than the water and chicken.

    I use:

    Two boneless, skinless chicken breasts, dice them and put them in the soup pot.

    I add a bit of butter, some salt, pepper, and a medium finely diced onion.

    I gently fry until the onion is translucent and the chicken is cooked on all sides(Probably will still be pink in the middle but that is ok)

    I add 8 or so cups of water, a box of chicken broth, and start that simmering on low heat. That will cook like that for a couple of hours.

    Meanwhile, I peel and dice about two medium side carrots, and also dice about two stocks of celery.

    After the soup has been simmering for a couple of hours I add the celery and carrots, and taste for flavor.

    I will also add some dried parsley, dried chives and a bit of dried summer savory for taste too. (Don't go crazy with them, you can always add more but you can't take it out)

    Once the carrots are tender I add a handful of either noodles or rice, sometimes a bit of both, and let them cook until they are tender.

    If I am really into cooking I will sometimes make a batch of biscuits to dunk too.

  • I start with 1 loosing fighting cock. Skin & gut remove giblets. Slow cook for 24 to 72 hours in spiced water the bird & giblets.. Add no salt. Till meat falls from bones. Remove bones from broth. Put chicken meat back in slow cooker. Taste broth. Add bullion normally not needed & more spice if needed. Simmer 4 more hours. Then add vegetables or noodles to meat broth. Hard to get good roosters for soup in the U.S.

  • Saute onions in butter, add chopped carrots, then celery, then garlic, then broth. Bring to a boil, poach the chicken breasts ~12 mins. Remove, shred. This needs salt, pepper, thyme, parsley, bay leaves and noodles or rice -- but you get the idea.
